DUTIES AND RESPONSIBILITIES
- Prepare meals (buffet or à la carte) as per the day’s menu and lodge standards
- Follow standardized recipes and portion control guidelines
- Prepare ingredients (chopping, marinating, pre-cooking) in advance
- Maintain cleanliness and sanitation of kitchen equipment and workstations
- Manage time effectively to serve meals on schedule (especially for safaris/tours)
- Ensure food safety and hygiene (HAACP and health regulations) at all times
- Store leftover food and ingredients according to safety standards
- Coordinate with other kitchen staff to streamline workflow
- Report shortages or issues with supplies and equipment
KEY REQUIREMENT SKILLS AND QUALIFICATION
- Minimum 1 year experience as a cook or kitchen assistant in a hotel, camp, or lodge
- Strong skills in food preparation, plating, and kitchen organization
- Experience with both local (Kenyan) and international cuisine preferred
- Excellent hygiene practices and understanding of kitchen safety
- Ability to follow instructions and work independently
- Flexibility to work long hours and early/late shifts
