DUTIES AND RESPONSIBILITIES

  • Prepare meals (buffet or à la carte) as per the day’s menu and lodge standards
  • Follow standardized recipes and portion control guidelines
  • Prepare ingredients (chopping, marinating, pre-cooking) in advance
  • Maintain cleanliness and sanitation of kitchen equipment and workstations
  • Manage time effectively to serve meals on schedule (especially for safaris/tours)
  • Ensure food safety and hygiene (HAACP and health regulations) at all times
  • Store leftover food and ingredients according to safety standards
  • Coordinate with other kitchen staff to streamline workflow
  • Report shortages or issues with supplies and equipment

KEY REQUIREMENT SKILLS AND QUALIFICATION

  • Minimum 1 year experience as a cook or kitchen assistant in a hotel, camp, or lodge
  • Strong skills in food preparation, plating, and kitchen organization
  • Experience with both local (Kenyan) and international cuisine preferred
  • Excellent hygiene practices and understanding of kitchen safety
  • Ability to follow instructions and work independently
  • Flexibility to work long hours and early/late shifts
